1/4 cup red bell pepper, chopped (I used a yellow pepper)
1/4 cup shallot, chopped (I used red onion)
2 Tbsp. Olive oil
1 tsp balsamic vinegar
Juice of 1/2 lime
Lots of Leaves of herbs that you would like to use: I used basil, tarragon, mint and flat leaf parsley
Salt and pepper to taste
HOW TO MAKE IT:
Combine: ALL ingredients into a food processor and blend until desired constancy. Season with salt and pepper and top with lightly drizzled olive oil and herbs.
