1⁄2 teaspoon oregano (I used 2 Tablespoons minced fresh oregano)
2 1⁄4 lbs skinless salmon fillet, cut into 1 1/2 inch chunks
How to Make It:
In large bowl, combine brown sugar, paprika, chili powder, red pepper, oregano, salt and pepper. Rub mixture between fingers to break up any lumps of sugar.
Drizzle Salmon with a small amount of olive oil, rub spice mixture evenly on Salmon. Let Salmon sit for 30 min to come to room temp with rub on it.
Place on hot grill grate and cook 8 to 12 minuites or until salmon turns opaque throughout.
