A Greek specialty usually made with chunks of lamb, souvlaki [soo-VLAHkee] is a simple-looking food with a surprising depth of Mediterranean flavor.
FOR THE PORK, COMBINE:
1 pork tenderloin, cut into 24 cubes (1 lb.)
½ cup fresh lemon juice
¼ cup olive oil
¼ cup chopped fresh parsley
¼ cup chopped fresh mint
2 cloves garlic, minced
1 tsp. each kosher salt and black pepper
THREAD:
24 cherry tomatoes
1 red onion, cut into 1-inch pieces
GRILL:
4 pieces flatbread, brushed with olive oil and seasoned with salt and black pepper (6-inch)
FOR THE TZATZIKI, COMBINE:
1 cup plain fat-free Greek yogurt
1/2 cup diced English cucumber
¼ cup chopped fresh parsley
¼ cup chopped fresh mint
1 Tbsp. minced lemon zest
1 Tbsp. olive oil
1 tsp. honey
For the pork, combine tenderloin cubes, lemon juice, 1⁄4 cup oil, 1⁄4 cup parsley, 1⁄4 cup mint, garlic, 1 tsp. salt, and 1 tsp. pepper in a large bowl. Cover pork and marinate in refrigerator, at least 3 hours or overnight.
Preheat grill to medium-high. Brush grill grate with oil.
Thread pork, tomatoes, and red onion alternately onto skewers. Grill skewers 8–10 minutes.
Grill flatbread on both sides until toasted.
For the tzatziki, combine yogurt, 1/2 cup Cucumber, 1⁄4 cup parsley, 1⁄4 cup mint, zest, 1 Tbsp. oil, and honey in a small bowl; season with salt and pepper.
Serve skewers on a bed of salad with flatbread and tzatziki.
