Leftover Turkey sliders and mashed potato cakes paired with Shofer Areni red wine

INGREDIENTS:
  • 1 package Hawaiian rolls
  • 1-1 ½ cup leftover stuffing
  • 1 ½ cup leftover turkey
  • ¾ cup leftover cranberry sauce
  • Provolone cheese
  • 1 tbsp melted butter
DIRECTIONS:
STEP 1: Heat oven to 300 degrees
STEP 2: Keeping the Hawaiian rolls attached, split them in half and set the tops aside
STEP 3: Spread a layer of stuffing on the roll bottoms, top with turkey and cranberries. Top with cheese
STEP 4: Place the tops on and brush with melted butter
STEP 5: Place in the oven and cook 12-15 minutes, or until cheese is melted
STEP 6: Cut sliders to separate and enjoy!

MASHED POTATO CAKES:

INGREDIENTS:
  • 1 tbsp oil
  • 2 cups leftover mashed potatoes (make sure they are cold!)
  • 1 cup shredded cheese
  • 1/8 cup green onions, copped
  • 1 egg
  • 2 tbsp flour
DIRECTIONS:
STEP 1: Combine all ingredients
STEP 2: Shape into patties (similar to small pancakes)
STEP 3: Heat oil in skillet
STEP 4: Cook patties for 3-4 min, flip and repeat
STEP 5: Top with a drizzle of gravy and enjoy!
