Shredded Chicken Taco or Rice bowls paired with Cinsalt

INGREDIENTS:
SHREDDED CHICKEN:
  • 1 Lb cooked shredded Chicken - Iused rotisserie pre-cooked chicken
  • 1 small white onion diced
  • 1 can black beans
  • 2 tablespoons olive oil
  • 2 cloves of garlic, minced
  • 1 teaspoon smoked paprika
  • 1 teaspoon paprika
  • 1/2 teaspoon ground coriander
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 1/2 teaspoon dried oregano
  • 1/4 - 1/2 teaspoon cayenne pepper
  • 1 teaspoon coarse salt
  • Depending on how you want to eat it: Rice or flour or corn tortillas

FOR SERVING:
  • Sour Cream
  • Shredded cheese
  • Chopped avocado
  • Cilantro
  • Other toppings as desired

INSTRUCTIONS
  1. In a large bowl combine olive oil with minced garlic, spices, and salt. Add chicken and toss until chicken is evenly coated in spice mixture. Let sit for 30 min to let the flavors meld. 
  2. To cook on the stovetop: Preheat cast iron or heavy-bottom skillet over medium high heat. Add 1 - 2 tablespoons oil and coat bottom of the pan. Add diced onion and cook for 2-3 min. Add chicken and black beans cook for 4-5 minutes until dish is heated up.
  3. Make rice if serving as a rice bowl or warm up tortillas. 
  4. Serve with rice or warmed tortillas and desired toppings.
