Pan fried chicken Scallopini with red wine pasta sauce
Pan Fried - Chicken Scallopini Ingredients:
2 lbs chicken breast, leveled to 1/2" thickness
2 c. flour
3 Tbsp salt
1/2 Tbsp pepper
3 eggs
2 c breadcrumbs
1/2 c vegetable oil
Directions:
Step 1: Mix flour, salt, and pepper, place in shallow pan
Step 2: Crack eggs and place in shallow pan
Step 3: Place bread crumbs in shallow pan
Step 4: Place chicken breast in Ziplock bag and flatten with mallot to 1/2" thickness and place on sheet pan.
Step 5: Standard breading procedure - Flour thoroughly, egg, breadcrumbs.
Step 6: Heat oil on medium high heat, carefully add chicken to pan, brown, flip, brown, placed on prepared sheet pan and place in oven on 400 degrees for 5 - 10 minutes each side.
Red Wine Sauce Ingredients:
1/4 c olive oil
1 onion, diced
1/4 tsp salt
4 garlic cloves, diced
1 c dry red wine
2 lbs fresh tomatoes (diced) or 28 oz. can diced tomatoes
1 tsp dried oregano
1/4 tsp crushed red pepper flakes
Directions:
Step 1: Add the oil, onions and salt to a large, shallow pan. Cook onions over medium heat until they begin to brown (approx. 5 min.) Add garlic and cook 1 minute more.
Step 2: Slowly pour half the wine into the pan. Let it come to a simmer and then add the remaining wine. Continue to simmer the wine for 5 minutes.
Step 3: Add the tomatoes, oregano, and red pepper flakes to the pan. Increase the heat to medium-high and bring to a simmer.
Step 4: Simmer the tomatoes for 20-25 minutes, or until most of the water has evaporated and the sauce has thickened.
Place chicken atop desired noodle (prepared according to package directions), top with red wine sauce and freshly grated parmesan (goat cheese is another great option!!)
