' BBQ Chicken Bruschetta and Valravn Zinfandel - Vino Mas

BBQ Chicken Bruschetta and Valravn Zinfandel

  • 1/2 tsp each granulated garlic, chili powder, brown sugar and kosher salt
  • 1/4 tsp each black pepper and ground cumin
  • 1/8 tsp smoked paprika
  • 12 oz can chicken breast (you can grill and cut chicken breast if you do not want to use canned)
  • Olive Oil
  • Baguette Slices
  • 1- 2 ears corn, cut corn off cob
  • 1 bunch Chives
  • 1/2 cup Cilantro
  • 2-3 Avocados
  • Juice of 1 lime
  • BBQ Sauce of your choice

Step 1:  Combine ALL spices.  Place canned or cut chicken in bowl, mix in the spices.  Add 1-2 tbsp olive oil and let sit for 1/2 hour. 
Step 2:  Cut Avocados into slices and top with Lime Juice. 
Step 3:  In a frying pan, add Olive Oil, corn and chives and cook for 2-3 min. Add to chicken mixture 
Step 4:  Drizzle cut baguette slices with Olive Oil.  Place on Grill pan and grill until lightly browned on both sides. 
Step 5:  Top each baguette slice with avocado and chicken mixture.  Drizzle all baguettes with BBQ sauce and top with Cilantro.
