Salton is recognized as one of the main Brazilian wineries, and is a leader in the commercialization of national sparkling wines in Brazil. Today, at the head of the winery, members of the fourth generation of the family preserve the legacy of its founder, Paulo Salton, supported by the values built over more than 100 years of history and inspired by the simplicity and hard work of the first generations.
The Main Red this month is a Cabernet Franc, Karen made a Croque Monsieur with steak fries to pair with it. It is a delicious French ham and cheese sandwich made with gruyere, parmesan, ham and a simple béchamel sauce, toasted in the oven. The wines bright acidity cut through the rich cheese and creamy béchamel, while its fruity and earthy, slightly vegetal notes complemented the savory ham and toasted bread. I prepared a simple potato soup to go along with the sandwich. Yum!
Deb Paired the Intenso Cabernet. "Coming off the holidays and all the rich foods and desserts, I wanted to make something fresh and simple. We are just a few short months from Spring!! The Salton Cabernet is medium bodied, fruity and fresh and has a balanced acidity that reflects the fresh acidity of this cherry tomato sauce. We added leftover steak from the grill which went perfectly with the smooth tannins and slightly peppery finish. Protein wasn’t even necessary as the wine and the fresh sauce had a particular savory quality due to how well they complimented each other. Enjoy!"
I made a simple chicken, butter and basil dish to go with the Chardonnay. I served the chicken over basmati rice with pan roasted broccoli, mushrooms and onions. This was a very quick, super easy dinner and the Chardonnay was perfect with it. The Chardonnays fruity creamy notes complemented the buttery creamy flavor of the chicken, while its subtle fruitiness balanced the notes of the fresh basil.
