This month we are featuring wines from Bordeaux for the main red and white. Bordeaux (“Bore-doe”) refers to a wine from Bordeaux, France. Bordeaux is one of the world's most famous, prestigious and prolific wine regions. Over 90% of Bordeaux wines are red wines made with Merlot and Cabernet Sauvignon and whites are made with Sauvignon Blanc and Semillon. The compliment red is from Rhone, France and is a GSM: Grenache, Syrah, Mourvedre.
I made a garlic butter, mushroom steak to pair with the main red. The Bordeaux Rouge is a medium bodied, fruit forward, un-oaked wine that is easy drinking and ready to drink now. Because this wine is not aged in oak the tannins are soft and has nice acidity. The wine paired well with the rich steak and the buttery, herbal sauce. Mary recommends serving it slightly chilled with anything from rib-eye steaks and pan-seared duck breast to earthy mushroom dishes and even burgers off the grill. Because this red is so easy drinking for a Bordeaux, it is one that actually does not need food to drink it with.
Our complement red for the month is a GSM blend out of Côtes du Rhône that Deb paired with pork. Here are her tasting notes: "The dark fruits and slight acidity of this wine are so balanced throughout that it really handled a sweet balsamic glaze fantastically. Such a simple recipe that helped showcase the hint of spice in the wine at the finish. You could add any side dish and it will be fantastic, but something about the grilled cauliflower and sweet potato just added that extra sweet/savory component."
Winemaker’s Tasting Notes: Showcasing the Cab Franc lilt with notes of violet undergirded by elegant spices, the 2021 Thalia Vineyard Designate is Vibrant and high toned on the palate, with a core of bright acidity and elevated tannins. Fermented in small lots, aged in French oak for 12 months (~25% new), then finished in concrete tank for 6 months, this is traditional Cabernet Franc. 150 Cases Produced.

NOTES: Les Abeilles (The Bees) is named for the bees that inhabit the vineyards of the southern Rhône Valley. This wine is medium in weight and silky with dark red fruit characteristic and a hint of spice. It is a 60% Grenache, 30% Syrah and 10% Mourvèdre.Recipe to pair with Les Abellies:

NOTES: Mid-weight body with nicely defined aromas of guava, gooseberry, lime and tarragon. Cleansing and refreshing acidity with flavors of citrus and melon. A deep texture and richness of body that is a hallmark of this region. Recipe to pair with Bordeaux Blanc:
