 OMEN wines are hand-crafted with care from high-quality fruit that comes from “hidden gem” AVA vineyards. All OMEN wines are  VEGAN FRIENDLY.

This month we are doing two Cabernets from two different regions, Paso Robles/Sierra Foothills and Napa, they are both from Omen winery, but due to the regional differences, the two wines are starkly different. Most Cabernets are blended with other varatials to soften the tannins, lower the acidity, and enhance the complexity and structure. However, both of these Cabernets are 100% Cab and both are excellent in their own different ways. 

The main white is a Sauvignon Blanc from Clarksburg AVA, California.  All three of these wines are small production: Paso Cabernet: 700 Cases, Napa Cabernet: 300 Cases and Sauv Blanc: 1300 Cases produced. One cool thing about these wines, is that the bottles show what ingredients are in the wine: Grapes and yeast. According to AI: "California winemakers, operating under U.S. federal (TTB) regulations, are allowed to use over 60 to 70 different authorized additives and processing aids in winemaking, ranging from stabilizers and fining agents to color enhancers." Omen wines do not have any additives, a relatively uncommon thing for California wines. 

The Cabernet the is 50% from Paso Robles and 50% from the Serra Foothills has strong notes of black cherry, blackberry and black plum. I made a bone in pork chop dish with a fresh cherry, rosemary reduction sauce. Don’t be tempted to go for boneless chops; a dish this simple and flavorful calls for a heavy-hitting bone-in situation. The fresh pitted cherries are exactly what you want scattered throughout a rosemary-scented pan sauce for thick-cut pork chops. The wine and pork chop dish was a perfect match!

AJ paired the Sauvignon Blanc with a Lemon Herb Roasted Chicken. "The bright citrus and herbal notes of this Sauvignon Blanc lift the richness of the roasted chicken, while it’s crisp acidity keeps each bite feeling light and balanced - a perfect winter pairing that does not feel heavy. This chicken was easy to pull together, and looks elegant, always a bonus when you want to entertain or dine by candlelight (Valentine’s Day is coming up!) I roasted potatoes and carrots with the chicken, and they were a great compliment as well. For the Napa Valley Cabernet. I made this super simple. Napa Valley Cabernets scream for a great steak. I made a simple herbed butter, with garlic and sun dried tomatoes to put on top of the steaks as they were resting. As the saying goes: "A Cab and a Slab", it isn't wrong!

Omen Cabernet: 
NOTES: This Cabernet is a rich, full-bodied, and vegan-friendly red with a deep ruby color. It features notes of blackberry jam, black cherry, and plum, complemented by subtle French oak, cedar, and hints of smoky graphite. The palate is balanced by smooth, non-bitter tannins.

Omen Sauv Blanc: 
    NOTES: This Sauv Blanc is a vegan-friendly, low-sulfite wine featuring  vibrant, clean, and crisp characteristics. It offers aromatic notes of key lime and honeydew melon, providing a refreshing, high-acid profile ideal for seafood pairings, characterized by a lively finish.

Omen Napa Valley Cabernet:  
NOTES: Omen Single Vineyard Napa Cabernet Sauvignon is a rich, full-bodied red featuring pronounced aromas of blackberry, cassis, and cedar, with hints of smoky graphite. It offers a creamy mid-palate with smooth, non-bitter tannins, delivering flavors of plum, dark chocolate, and subtle oak.
