Vino Mas Feb 2025 Wine Club: Boomtown Wines

 It's February which tends to be what many consider the month of chocolate, sweets and wine.  The three meals this month all revolve around chocolate, both dark and white. All three wines can be drank by themselves, but I found that by pairing them with the chocolate recipes, the wines were better, however, I can say this about most wine. I am generally not a huge chocolate fan, give me the choice between chocolate and something salty, I will choose the salty most of the time. HOWEVER, these dishes were surprisingly delicious. Chocolate on steak and shrimp....who knew? Cheddar cheese, bacon, blueberries and white chocolate....what type of combination is that? Just as I always tell people, go out of your comfort zone with wine, it's just as important to do this with food too.  
 
Seasoned with a cocoa rub, finished with a butter-cocoa mixture, and drizzled with red wine sauce, pan-seared steaks are a special way to make steak in this Valentine month.  When combined with sweet paprika, allspice, and cayenne pepper, the cocoa powder offers a delicious, rounding earthiness in the spice rub. The Chocolate and the spices offer a depth of savory flavor that heightens the meatiness of the steak. The Boomtown Cabernet is medium bodied and shows notes of dark fruit, cherry and and spice which paired nicely with the chocolate rub and wine sauce. 
 
Catalan cooks have long added bittersweet chocolate to savory dishes for earthy depth of flavor. This combination of seafood and chocolate offers a perfect balance to the richness in the sauce and subtle sweetness from tender shrimp. The Boomtown Syrah is lighter bodied than most Syrah's and had just enough fruit and acidity; the combination of shrimp with the chocolate sauce, really balanced the wine. 

Deb did the pairing with the Boomtown Pinot Gris. "I found this recipe for fish stew and was waiting for the right wine to pair it with. The Boomtown Pino Gris was the one! Having the wine as part of the broth really made the lemon and herbal notes pop in both, and the acidity levels matched perfectly. But obviously, I failed Deanna’s theme of chocolate in our food pairings. So, I went on a mission to see what could pair with the soup and wine and have the “chocolate” theme. Instead of crusty bread that most people would have eaten with the soup, I found this incredible recipe for scones. I mean, blueberries, bacon and cheddar cheese – YES, please. Eating them warm with the white chocolate drizzled on top was like adding a hearty side dish and dessert all in one. The salty-sweet combination of the scone brought out different aspects of the wine, especially the baking spice and white peach. So, bring on the love for Boomtown wines this month (and bring me another scone!)"

 Boomtown Cabernet

NOTES:  A refreshing white wine with notes of citrus and tropical fruits. This wine presents a rich and complex flavor profile that evolves beautifully.
