"In every great bottle of wine, there is a story"
March has arrived and Spring is around the corner (hopefully!), we are highlighting Folktale wines once again. Folktale was inspired by the idea that in every great bottle of wine, there is a story. It is filled with the uniqueness of place, a year of sun and rain, and the art and craft of winemaking. The story is about our people, our guests, and our passion. This is a love story, and the best love stories never end.
The main red this month is the Folktale Cabernet Sauvignon: The Cabernet Sauvignon for this Folktale special bottling comes from Massa Estate in Carmel Valley in California. It is located only 14 miles from the coast, yet boasts some of the warmest weather in the region. It’s the terrain that makes the site so special, and also prevents the coastal breezes to reach it, allowing the weather to get so hot, which Cabernet loves. The grapes are organically farmed and hand harvested.
This month we did not do a pairing with the Cabernet, we highlighted 2 Cabernets last month from 2 different regions, this month is again another Cabernet from another region of California. When they say it great to pair a "Cab with a Slab' it refers to the classic food pairing of a bold, tannic Cabernet Sauvignon with a "slab" of steak (such as a ribeye or other grilled red meat). March brings weather temps that are all over the board, but there are typically days that are great for grilling and will call for having a good Cabernet with a grilled steak. Enjoy this wine however you decide, with or without a "slab"!
The Main white is the Le Mistral White Witch: The White Witch is a blend of four white varieties grown in Arroyo Seco, California that complement each other in a beautiful and harmonious way. Each lends different qualities that makes this special wine – some add aroma, others brightness or texture. The blend is 38% Roussanne, 34% Marsanne, 22% Grenache Blanc, 6% Viognier.
I paired the White Witch with twist on the classic Shrimp Scampi. I made a Cilantro Lime Scampi that was so good with the Le Mistral White Witch. The lime and herbal flavors brought out the citrus and tropical flavors of the wine. I served the Scampi over cooked Orzo, but you can eat the shrimp by itself as a side dish and "sop" the juices up with French or Italian bread or use it as an appetizer.

NOTES: Aromas of black cherry, blackberry, tobacco, and leather show through on the nose. Flavors of black cherry, and blackberries, spice and graphite shine on the palate. The wine is full-bodied with a chewy tannin structure and moderate acidity. Folktale Cabernet Sauvignon

Le Mistral Joseph's Blend
NOTES: An ode to the Northern Rhone region of France, this beautiful blend is complex with fruity Grenache up front and the backbone of Syrah on the finish. Tasting notes of strawberry, cherry, and baking spices. Perfect for those BBQ days in the backyard.

Le Mistral White Witch
NOTES: Peach, apricot, honeydew melon, candied pear, chalk, almond husk, and hay notes evolve as the wine opens up. The wine has moderate acidity and is balanced with a soft texture and creaminess that should pair with a variety of cheeses or seafood.~~~~~~~~~~~~~~~~~~

NOTES: The 2022 Carnival of Love Shiraz is a vibrant and expressive wine. It starts with raspberry and cherry scents, with a touch of aniseed spice. The taste is filled with rich red fruit, hints of coffee, coconut, and deeper plum flavors. Chocolate and spice add extra dimensions to this McLaren Vale Shiraz, making it a delightful wine to celebrate.
Don't forget to do the "Molly Dooker Shake" when you open the bottle.
Key Details for the Shake
Purpose: To eliminate nitrogen and fully open up the wine's flavor profile.
1. Pour out about 1 - 2 ozs into a glass of wine (down to the shoulder)
2. Screw the cap back on tightly
3. invert the bottle and shake, shake, shake.
4. The wine is ready when the foam disappears
