Steak topped with Marinated Mushrooms

INGREDIENTS: 
  • 4 - 4oz Steaks seasoned as you like
  • 1 small onion, thinly sliced
  • ⅓ cup red wine vinegar
  • ⅓ cup olive oil
  • 2 tablespoons dried parsley
  • 1 tsp brown sugar
  • 2 cloves garlic, peeled and crushed
  • 1 teaspoon salt
  • 1 teaspoon ground dry mustard
  • 1 pound fresh sliced mushrooms (I used Baby Bella and Shitake)
DIRECTIONS: 
Step 1:  Combine onion, vinegar, olive oil, parsley, brown sugar, garlic, salt, and dry mustard in a medium saucepan. Bring to a boil. Reduce heat, stir in mushrooms, and simmer for 10 to 12 minutes, stirring occasionally.
Step 2:  Transfer mushroom / onion mixture to bowl until ready to serve. 
Step 3:  Grill Steaks until desired doneness.  
Step 4:  Top steaks with mushroom / onion mixture and serve.
