Pancakes are not just for breakfast, you can enjoy them any time of day. Breakfast for dinner, used to be one of my favorite dinners and pancakes were one of my top picks. The fun thing about pancakes is that you can make and top them in so many ways, with flavored syrups or with lots of fun additions like fruits, nut butters, chocolate, etc.. They can made thinner and used as wrappers (like a crepes) for sausage, bacon, mushrooms, fruits, etc. or they can be served the American traditional way with a slab of butter and maple syrup poured over the top of the stack. Anyway you have pancakes, they are delish.
A wine that's as sweet or sweeter than the pancakes is best, as dry wines can taste bitter with sweet dishes. This rule also holds true for sweet dishes of any type. The best wine to pair with pancakes depends on the toppings and flavors you use, below are some suggestions:

- Maple syrup: Pair with a Chardonnay, semi-sweet Riesling or Valpolicella Ripasso
- Fresh berries and other fruit: Pair with a sparkling or still Rosé
- Sugar and lemon pancakes: Pair with a slightly sweet, refreshing wine like Moscato or Prosecco NOTE: This is how pancakes in the UK are traditionally served.
- Bacon pancakes: Pair with a lighter Cabernet, Shiraz or Cotes du Rhone
- Chocolate pancakes: Pair with a fortified Argentine Malbec, Nero d'Avola or a semi-sweet red
- Cheese and Ham: Pinot Blanc, Muscadet or Gavi di Gavi are all great options.
- Salmon: Champagne or a traditional method sparkling wine with enough freshness and acidity to cut through the batter mix and bring the salmon to life.
- Mushroom pancakes: Pair with Pinot noir
