We are highlighting the Syrah, Show Pony Red Blend and Sauvignon Blanc this month.  I paired the Syrah with Balsamic Apricot Pork Chops that were an easy dinner option for a weeknight.  The Sauv Blanc went beautifully with the Kale salad that I made. Again, an easy dinner option if you add some chicken or fish, or a great side salad.  Deb paired the Show Pony Red Blend with

The Syrah this month is on the fruitier side which is perfect for the warm weather that will be around soon. I used Apricot preserves for the glaze, but you can use what you have, a blackberry or a blueberry preserve would also be amazing for the glaze, especially since the wine has lots of ripe berry notes. I used bone in chops, I like this cut over pork loin and used a cast iron pan so that the chops can be started on the stove top and then moved to the oven to either finish cooking or stay warm while the rest of the meal is coming together.

Deb paired the Show Pony with a Chicken dish. Here is her write up on the wine pairing with her dish. "This wine is so versatile with its medium body and luscious mouthfeel that it can stand up to almost any red pasta sauce/meat combination.  I wanted to use chicken and felt a crunchy coating was in order so I decided on Pan Fried Chicken Scallopini.  The part of this dish that really steals the show is the red wine sauce!  Ridiculously easy to make and using the wine as an ingredient helps bring the flavors of fig and unsweetened chocolate into the sauce.  Added a little extra "umph" of red pepper flakes than recipe calls for (which I normally do not prefer but hubby does) and wow did the cherry and cola flavors come across and cut through this little bit of extra spice.  This will go on the Harding "easy favorites" list for sure! The Sauvignon Blanc went great with the Kale Salad. The wine show lots of citrus and exotic tropical flavors with notes of herbs and zest. Kale has a herbal, bitter note to it which complemented the herbal qualities of the wine and the sweetness of the craisins pulled out the fruit notes of the wine. The salad calls for nuts, you can use any type of nuts you have, I happened to have sunflowers seeds and pistachios, so that is what I put in the salad. The dressing is made up of honey, fresh lime juice and olive oil. It was a super fresh dressing that could be made with lemon juice instead if you wanted and can be used on any salad.  Yum!

Two Mountains Syrah
NOTES:  Whoa, Paradise City…in a bottle! Upon first glance, your nose is serenaded with blue fruit, a little graham cracker spice and richness of wet tobacco leaves with a sprinkle of black pepper. After you’ve been mesmerized by the sweet aromatic chords your taste buds are immediately hit with a blackberry/Bing cherry fruit melody, a touch of cola, a little cedar leaf, & and a savory herb mélange. With very pretty oak, great acid and supple tannins, this wine is pretty much knock, knock, knocking on all doors.

Two Mountains Show Pony Red Blend
NOTES: 
 Show Pony is a red blend of Cabernet Sauvignon, Cabernet Franc and Merlot. Rich aromas of perfectly baked cherry, a dash of coriander, dried Eucalyptus, and coffee grounds are immediately pursued by cola flavors, fresh fig & bakers’ chocolate with a touch of lingering soft tannins leave your mouth salivating for more.

 Two Mountains Sauvignon Blanc
NOTES:  
This Sauvignon Blanc rocks a tropical fruit medley of starfruit, kiwi, and golden pineapple with the faintest hint of grass as green and fresh cut as our Ron Lawn. Bursting with flavors of guava, passion fruit, overripe peaches and mango with just a touch of zesty anise, this refreshing white will all but compel you to reach for your flip flops and blast your favorite summer tunes.
