' Gazpacho with Neboa Albarino - Vino Mas

Gazpacho with Neboa Albarino

  • 4 - 5 large tomatoes, chopped
  • 1/2 cup English cucumber, chopped
  • 1/4 cup red bell pepper, chopped  (I used a yellow pepper)
  • 1/4 cup shallot, chopped  (I used red onion)
  • 2 Tbsp. Olive oil
  • 1 tsp balsamic vinegar
  • Juice of 1/2 lime
  • Leaves of herbs that you would like to use:  I used basil, tarragon and flat leaf parsley
  • Salt and pepper to taste


ALL ingredients into a food processor and blend until desired constancy.  Season with salt and pepper and top with lightly drizzled olive oil and herbs. 

Pair with a crisp Albarino or Sauv Blanc
